I think multiple mishaps (I once attempted to bake cookies on a pan with holes in it and obviously failed - brilliant idea) have instilled in me a fear of this should-be-simple task. Overcoming this fear is something that I am working toward! I am striving to stay focused on the big picture (seriously, what is the worst thing that could happen? I burn the food and it tastes terrible. I'm pretty sure we will live and move on!). As a newlywed, I am now not cooking just for myself, but for my sweet husband as well. I so desire to serve my husband by preparing our meals, especially after he has had a long day at work, and I am determined to improve in this area! Steve is so sweet that he will eat just about anything (burnt or not) and be happy. But it is baby steps (a.k.a. easy recipes) that are helping me practice and develop my cooking confidence! So, long story short, today I decided to share a recipe that has recently become one of our favorites. And it is the epitome of easy.
Salsa Chicken

Ingredients:
- 6 chicken breasts (depends on the size: I usually use about 4 or 5 fairly large ones - I get frozen chicken breasts, but thaw before putting them into the crock-pot)
- 15 ounces black beans
- 1 1/2 cups corn (I usually just put an entire 15 oz can in)
- 1 1/2 cups salsa (again, does not have to be exact)
- cheddar cheese, grated
- rice, cooked (I have also put the finished product in tortillas instead of serving over rice, but we liked the rice better)

Directions:
- In a crock-pot (slow cooker), combine all ingredients except the cheese and rice.
- Cover and cook on low (6-8 hours) or high (4-5 hours) - I have done it both ways. Both were great.
- Serve over rice (I used Minute Rice because it is easiest...baby steps folks) and top with cheese.
This was dinner last night! Yum. Steve walked in after work and was so excited to see that Salsa Chicken was on the menu - I believe we have found a staple recipe!
And as for my fears - we are commanded to cast our anxiety on the Lord (1 Peter 5:7). What do I have to fear (especially in such a small thing as cooking)?
"Therefore I tell you, do not be anxious about your life, what you will eat or what you will drink, nor about your body, what you will put on. Is not life more than food, and the body more than clothing? Look at the birds of the air: they neither sow nor reap nor gather into barns, and yet your heavenly Father feeds them. Are you not of more value than they? And which of you by being anxious can add a single hour to his span of life?" - Matthew 6:25-27So thankful for the Lord's provision in EVERYTHING - there is nothing I should be anxious about!
