Sweet Potato Hash
I've been looking for new recipes to try, and when I stumbled across this one, I knew it would become a favorite. We tried it for the first time this weekend, and it was amazing. Highly recommend. Here is the recipe, which we modified slightly:
- 2 large sweet potatoes, cubed - {The recipe says to peel them, but we skipped this step. Also, in the future, I would probably use 3 or 4 sweet potatoes. Two sweet potatoes was enough for the two of us, but I was wishing there were leftovers for us to munch on the next day!}
- 5 pieces of bacon
- 1/4 cup chopped white onion
- 1/4 cup chopped green onion
- 1/2 cup chopped green bell pepper
- salt to taste
- ground pepper to taste
- paprika to taste
- avocado to garnish with {we didn't have this on hand, so we left avocado out this time, but if desired, it can be cut up and put on top after the hash is complete}.
- Fill a medium or large saucepan 2/3 full with water and bring to a boil. Add the cubed sweet potatoes and boil lightly for about 8 minutes {until sweet potatoes are tender}. Drain sweet potatoes in strainer and set aside.
- Cook bacon in a large skillet until crispy, saving some of the bacon fat/grease in the pan for the following steps. Place bacon on a paper-towel lined plate. Crumble bacon into smaller pieces and set aside.
- Using the same pan used for the bacon, add the chopped white onion, green onion, and green bell pepper and saute over medium heat for about 3 minutes.
- Add the drained sweet potatoes to the pan, ensuring that they are covering the bottom of the pan in a flat layer. Let the mixture cook without stirring for about 5 minutes {sweet potatoes should start to brown}. Increase heat to high, then stir and allow to cook for an additional 3-5 minutes. Add crumbled bacon to the pan and stir.
- Remove from heat and add sea salt, ground pepper, and paprika to taste.
- *Optional: Steve is sort of an egg fanatic, so we made a few scrambled eggs, put them into our bowls, and then put the sweet potato hash on top.
- *Optional: Garnish with avocado if desired {source}.
